One of my favourite recipes to go with chicken skewers is corn on the cob. This is easy to make and you can grill the corn while you are grilling the chick skewers.
Take 4 pieces of corn, one per person and pour Piri Piri sauce over the corn making sure it is all covered.
Cooking
Place the corn on the cob on the grill on the coldest part of the fire as you do not want to corn to burn, you want it to cook slowly to keep it juicy and tender.
You can tell when the corn is starting to cook when it starts to turn dark brown. On amedium fire, I would cook it for 10 – 15 minutes at the most.
When done, take off the bbq and let it rest while the chicken skewers finish cooking.
The corn on the cob tastes delicious and is a welcome treat whenever we have it.
